A Taste of Innovation Written by Heather Landi Wednesday, 04 May 2011 10:12 In June, thousands of food scientists, beverage and food suppliers and marketers, along with news media, will converge at the New Orleans Morial Convention Center for just a few days, drawn by the promise of encountering the driving forces behind new beverage innovation and to see prototypes demonstrating the latest health trends. From stevia-based sweeteners to exotic fruit flavors to functional ingredient fortification, R&D experts from suppliers around the globe will be on hand to showcase what they have to offer the beverage market. Here’s what to expect from some of the exhibitors at the upcoming IFT show, but there are sure to be some surprises as well. Flavor Trends Sweeteners
Stevia-based sweeteners are still a hot topic among beverage formulators and consumers as it’s all natural, zero calories and provides a sugar-like taste. Rebaudioside A, an extract of the stevia leaf, can be up to 300 times sweeter than sugar.
Wild Flavors (Booth 6813) will showcase beverages sweetened with its Sunwin stevia product. The company offers various versions of the sweetener, including Reb-A 95 percent, 60 percent and 80 percent, to suit beverage formulators’ needs. The company also offers proprietary taste modification technologies to help provide a clean, sweet taste profile to the often bitter, licorice flavor of stevia. |
